Our journey begins with one of Yunnan’s most soulful dishes: Crossing Bridge Noodles (过桥米线). A dish born from a story of love and care, it has long symbolized warmth and nourishment. Bai Wei was founded by Mei, an Asian American woman inspired by the comfort foods that shaped her childhood and her journey between cultures. What started as a craving for something familiar became a mission to make heritage dishes accessible to anyone, anywhere. Together with her partner, Alan, she brings that vision to life, pairing authenticity with creativity and tradition with modern ease.
At Bai Wei, we believe food is more than what’s on the table. It’s care, memory, and connection. Our name, Bai Wei 百味, means “a hundred flavors,” a reminder that every bowl carries not just ingredients, but stories.
